Carolina Style BBQ Sauce

Ingredients:

  • 16 oz. Apple cider vinegar
  • 2 T Garlic, finely minced
  • 1/2 T crushed red pepper
  • 2 oz. crystal hot sauce
  • 1 T Dry mustard
  • 3 oz. Molasses
  • 3 oz. Catsup
  • 1/2 T Sugar
  • Salt to taste

Procedure:

Make slurry with some mustard and some of the vinegar. Heat balance of vinegar to a boil and then turn on remaining ingredients. Simmer for 10 minutes and cool. Mob ribs or chicken frequently during cooking with the sauce. Also use to season pulled pork or serve on the side.

 

Rib Rub

  • 2 c Paprika
  • 1/2 c Salt
  • 1/4 c Cayenne
  • 2 T Black pepper
  • 2 T White pepper
  • 1/4 c Dry mustard
  • 1/4 c Garlic powder
  • 2 T Cumin
  • 1/4 c Sugar

Mix all and keep dry.
